That's where a big chunk of their money is made - not just the front-facing superchats they get from the public, but the shill deals they make with other businesses behind the scenes.
So you only get a very sanitized, inoffensive version of "critique", if at all.
Some 2view indie with nothing to lose, sure, is free to shittalk all they want, because nobody cares anyway. A smallcorpo vtuber might also get away with it, if it still flies under the radar and doesn't rock the boat too much. But when you're at the level of Holo or Niji and have enough eyes on you and corporate management breathing down your neck, you better keep your le based powerlevel opinions in check, or couch it in enough plausible deniability irony, or only do the most milquetoast "critiques" of "acceptable" targets everybody already agrees with anyways (ala "haha, Sword Art Online sucks, amirite guyz?!" etc.)

Who gives a fuck - I don't watch vtubers for their good or bad taste in anime&manga, it very rarely comes up, if ever, and if a vtuber I otherwise enjoy has some anime&manga that's different from mine, I don't care and it doesn't stop me from enjoying them. (Similarly, a vtuber I don't enjoy and don't find entertaining doesn't suddenly get better just because they might like a few of the same shows I do).
It's like asking if any vtubers are good at gameplay - who cares? I watch vtubers to be entertained by their cuteness, not because I want to see sweaty amazing gameplay. I'd watch some dudebro actual professional for that.
