The issue comes down to authority of interpretation of scripture (and tradition if you're Catholic, since Christianity itself predates the Bible). Protestants don't care and just say believe anything you want, Orthodox say it comes down to ecumenical councils, and Catholics say it comes down to the successor of Peter who was granted the keys to the kingdom (Matthew 16:19)
