From what she said today she had a big crew of camera men and light operators, so they did it more like you operate a real stage performance.
If there are a lot of actor switches (many guests) you would probably pre record some stuff because a lot of systems are kinda limited in the amount of actors they can track (you could kinda do it live in a multi PC setup where you transmit motion data over the network) and a new actor would need calibration.
The VTuber world probably has a mix of different techniques depending on which company does it and the situation.
