While I don't think there are pressure plates in the way you're thinking, they are large-flat see-saws that are integrated into pit traps. Pretty sure the crushing walls ones are pure fiction, but I could be wrong.
The problem with traps is they tend to be indiscriminate and can easily lead to accidents, so people tend to only use them if they're extremely confident they won't trigger them themselves by accident, or get caught via malfunction.
