So unless you've mastered a game to a degree that you cam play it without any conscious effort put into it, you will not be playing to the height of your capabilities. Combine this with the strong tendency of VTubers being variety streamers, i.e. changing the subject of their streams quite often and trying out new things, including recent games, which means they will likely not have any mastery in it and you will arrive at the conclusion that most VTubers just cannot constantly deliver high-skill gameplay.
But from what I gather, it is kind of one point of appeal to watch someone struggle with the game, slowly tring to overcome it and either rooting for them or feeling Schadenfreude at their repeated failure with the added bonus that it is presented by a cute anime girl. Same thing with said people playing horror games and getting scared, for a long as it's genuine. Faking these reactions spoils the experience.
So unless you find a VTuber playing one of their favorite games from their childhood or some enthusiast essentially only playing a small set of games the entire time or a really gifted natural gaming and entertainment talent, you will usually have to put up with less than perfect gaming. If the streamer in question has a playstyle that's too much at odds with your preferences, i.e. too much powergaming or not enough or too scatterbrained, not paying attention to the plot etc. then you could just watch another streamer. They aren't exactly rare these days and if you want to watch a game that is at least somewhat well known, then chances are good that you'll find a stream of just that game, even more if you add VODs to it.
For really high level gameplay and no distractions from a chat or a commenting voice, find a suitable longplay.
