Your concentration is always split between being entertaining and playing, and they usually play games fresh so that they can give the viewer more natural reactions (because that's also entertaining).
Imagine you're on the phone and expected to maintain a conversation while you're playing a new game.
Some are better than others at it. And some people are just bad at vidya games.

Have you ever watched GDQ or similar? Being good at games usually comes with an intense autism and social awkardness debuff. Almost none of the popular streamers are better than slightly above average at games. I'd rather have a VTuber that makes watching games fun then watch one that is really good at the game but otherwise boring.
