Sekiro is, to put it shortly, a game out of her league. She was instantly boxed into some sort of extreme tunnel vision from the start, which prevented her from feeling free to experiment with more things such as exploration and realizing that you can have multiple ways of doing things e.g. using stealth items instead of going in guns blazing, running out of enemy 危 range instead of stubbornly trying to block or parry it when she's not up to the task. It made her reject any form of trial and error with different shinobi tools or arts, saying that she doesn't want to use unfamiliar things in hard fights.
The moment she has the most fun is when the difficulty level is matched with her capability i.e. the 2nd Gen-chan fight which is actually one of the easiest boss.
Everyone has their own thresholds, and honestly the style of DS1-3 should be more suited for her. She shuts down when confronted with fast paced combat, and can hardly learn anything from it as a result. DS1 was slower so she has time to see and understand what she did wrong. Nothing wrong with this, not all games are meant for everyone.
