English is stupid and filled with THOUSANDS of inconsistencies and contradictions. There is no cope here, only your weak grasp on the English language. The only infallible truths behind the GIF vs "JIF" argument are that:
1. Initialisms are always pronounced by sounding out the name of each letter. Using them to refute the hard or soft G just shows that you don't understand the difference between them and other acronyms.
2. The creator/coiner of a word gets the say on the "correct" pronunciation. Full stop. Don't need to look any further than the tens of thousands of companies, names, trademarks with non-standard spellings for their associated pronunciation.

3. Language is always evolving. Linguistics studies not only the common rules that are set by a language, but also HOW that language is used by its speakers. Every single argument that attempts to refute the "jif" pronunciation using standard rules of grammar can be easily refuted with another already established word/acronym. And the same can be said for refuting the "gif" pronunciation, "death of the author," as I've already laid out.
