I really want a chemist vtuber who does occasional chemistry hand cam streams or something like nile red. Would be cool, but might be hard since a lot of chemistry is just waiting around.

It's not necessarily STEM bur I vaguely remember a female JP vtuber that would go around doing HVAC and other handyman stuff, prerecorded with 3D avatar overlay in post. It was interesting but wasn't my thing

I'm a civil engineer and getting the paper was a lot harder than my day job currently is. Software does most of the hard work for me and all I do is draw up things in CAD.

I do keep my desk closest to the emergency exit just in case I messed up a number here or there tho

Sounds pretty normal. Most content creators that talk about a topic aren't actually that well versed in it. They don't get views for being knowledgeable and intelligent.

Pretty much everything uses basic STEM techniques. That's different to tackling a topic that is very specific to a STEM field. How low do you want to set the bar? Are they STEM VTubers if they count numbers or do arithmetic?
