Why does my mom think V-Tubers are annoyingly high pitched? She really hurt my feelings by insulting them as "overly high pitched" and "annoying". I just wanted to bond with her.

But she's since watched Kanata with me. I just don't know if I can trust her. I thought we had a pretty open and trusting relationship. She seemed to like watching her play jump king but maybe she was just pretending so she could spend time with me.

The Hololive vtubers by and large do pitch their voices up to sound cutesy and feminine. See Kiara and Towa for example. I assume you don't interact with a lot of women so you wouldn't know but a woman would naturally notice. Show her indies or vtubers like Ange that don't artificially pitch up their voices and maybe you'll be able to bond.
