That said the most likely answers you will hear on the JP side are probably:
Botan, one of the main organizers, handled the boat race and archery contest, the latter of which makes up a really big chunk of the festival.
Pekora as one of the other main organizers and the namesake of the festival who basically does the rest of the problem solving work in the stream and has some funny interactions trying to use her Pekora English.
Miko who spends the first part of her stream scrambling to finish her haunted house. She's also the POV to watch if you wanted to hear Suisei: she has an extended after hours portion with her to see all the attractions. She still manages to make a fair amount of time for the bigger interactions especially during the archery contest. Much of her time is also taken up manning the house itself but any repetitiveness is made up for with the rolling cast of members and their reactions.
Coco who the festival was implicitly made for. She's the main character of the night, and she did make an effort to try and talk/interact with most of the other members at one point or another.
Many of the other girls went on dates so they had less larger group interactions if that's your thing:
Sora x AZKi
Rushia x Kanata
Watame x Iofi
Lamy x Ina
Fubuki x Sukonbu
Aki x Roboco who join an hour later have a more relaxed atmosphere than the rest and also go around after hours.
Moona and Ollie started out as a couple together but eventually joined the larger chats and get mixed in everything else going, Ollie being bilingual and Moona being Usaken's #2 and all.
Polka and Nene also went around together for a good chunk of the beginning.
The other ones who aren't mentioned are Oozora Circle - Luna + Reine, who were entertaining in their own right but often were doing their own thing.
Towa who made the bulk of the foundation for the sports grounds and spent most of her time with the other two organizers with a good chunk of Oozora Circle in the middle.
The rest of EN seemed to have the worst lag issues of them all, it's mostly a case of picking your oshi here. Kiara is probably an interesting picks as she naturally interacts with both sides a fair amount.
