In the N64 era, they introduce Ganondorf as a character. Ocarina of Time depicts his transition into Ganon, twisted into a monster by the power he sought and abused. While there really isn't continuity in the series, most games to follow keep with that dichotomy, with Ganon being the final monstrous form of a man who succumbed to his lust for power. I don't think you're supposed to conceive of the transformation as some sort of druidic hog-channeling, but rather him being twisted irrevocably into a form befitting his twisted persona. Which is also why the design of Ganon varies a lot between games and sometimes ditches the boar motif entirely--the design is representative of the narrative of the game and Ganondorf's arc within it.
