Gith took it even further and said that not only was Zerithmon wrong, but that his ethos was fundamentally incompatible with the essence of the gith people as an entire race, and thats why they hate each other almost as much as they hate mindflayers
individuals can certainly change or redeem themselves, but i think a lot of people consider "evil" to be a bad thing in the universe, when "evil" is actually just the other side of the coin within the fantasy realm. i think the distinction between good/bad and redemption can be made when you are talking about beings of extremely chaotic nature like demons, but githyanki are lawful evil entities that just do their own thing. mindflayers are like the epitome of an actual bad evil entity, brain eating slavers who are extremely violent and want nothing more than to rule the entire universe, keeping every other creature within it as a slave for their desires of work or food
