Fox isn't actually uninteresting, to be honest. She's basically the other half of phase connect's bumbling henchmen duo alongside shitrabbit. They've got that esoteric caricature energy that makes holos stand out better than most of nijisanji. I don't watch her myself, but I'd recommend looking into her just because the effort and energy is there. There's also the rest of phase connect to skim through for those who like lower energy chubas.
The roster isn't actually bad (as in boring) per se. Arguably more well rounded than other EN agencies who only have different shades of "normal person." Kawaii, Tsunderia (sans Kana), Amber Glow and...another one I forgot within a day are all still literal who's as far as I'm concerned, while Vshoujo just jumped off the cliff and drowned itself in an ocean of degeneracy. Phase Connect is more of a middle ground like Hololive where it gets a bit risque but doesn't completely nosedive into rants about sucking off vidya characters within 5 minutes of the stream starting. And I'd watch them before Niji EN any day, simply because watching Niji EN is like watching paint dry due to their lack of a token high energy chuba.
Granted, this is all relatively off topic except in the sense that they're not mundane or same, which OP appears to hate about half as much as I do. So maybe he really would enjoy watching a loli fox obaasan wear a popsicle costume with upside down panties on its head and buff muscular man-arms play some fall guys.
