Basically, the hard exterior and soft interior makes for an interesting gap where both the girl and player slowly learn more about each other. Over time, something happens where she forgets to put on the facade because of an intimate moment or a tragic situation that makes them vulnerable and then you realize she has some reason for trying to look tough so hard, be it their defense mechanism, a way to avoid change, etc.
Most tsunderes in anime are genuine bitches that even after "opening up" to the MC keep treating him like shit, but there's exceptions like Natsuki or Karyl from Priconne where it becomes a turning point in their character and change towards a more approachable and caring person. I wish they did this more.
