A lot of the gorey stuff in later versions are genuinely added in that period because medieval people really like grim and dark stuff. This is you should always take Grimm's and Perrault's versions with a pinch of salt.
The best example is red riding hood: a lot of people now think it's a cautionary tale about being raped or robbed by a stranger man, but this is just a later take. Other versions have the wolf be a werewolf and relate it with witchcraft, and an old italian version doesn't have a wolf but a character called Orca, probably a derived of Orcus, a minor roman underworld god, who kaputed the grandmother.
