One part of bread pudding that is important is the staleness of the bread which lets it absorb the custard and give it a bit of crunch which I like so I'm a bit hesitant since cornbread has more moisture like a cake but it could give it the unique taste I've been looking for since the recipe has gotten a bit boring for me over the years.
