Capcom doesn't own the rights to Link just because they once made a version of him with a bird on his head for The Minish Cap.
They don't even own the rights to that version of Link either.
Under your interpretation of copyright, Capcom could just make another Zelda game starring Minish Cap Link as long as they called it something else and didn't use any other Nintendo property in it.
Suisei almost assuredly sold the rights to her character to Cover when she joined Hololive. That means she wouldn't be able to use Hoshimachi Suisei anymore if she left unless Cover decided to give her the rights to the character back.
