For a normal person you'll want to eat meat and vegetables, and fill up any remaining calories you need with starchy stuff like rice, and rather too little than too much.
The only reason to go vegan is if you can't stomach the idea of eating animals, or if your body can't properly digest animal products. There is no inherent health benefit.
