RDR2 is kinda dull IMO. There's just too much downtime and too many moments where the game wants to pull control from the player, making you do walk-and-talk type stuff.
Witcher 3 is great, but you should probably find some vids to catch up on The Witcher 1/2 story before you start 3. The third game just chucks you in hard at the start, and if you don't remember at least half the lore you could be lost. Also, yeah the mods are strong QoL recommendations. The Blood and Wine DLC is also top tier.
