She has her normal stream schedule which is just as frequent as other members, her "priestess duties" as not Ina, her commitment to draw pieces off stream to celebrate big days for other members, and the frequent drawing related sponsorships that take top priority like the WACOM/pixiv one and the recent Molly Online crane game one
She draws insanely fast for the quality of her work, but it still takes at least 5 hours for each polished piece as we've seen while she's working live. There's just not enough time to work on Violet when all of these higher priority tasks get tossed to the top of the queue.
She can probably hire someone to do the MV, but she's probably already gone too deep into it to quit now, and she already promised that she'd be the one working on it, so the expectation is already there
