Quake games are entirely about free movement where you have less of a grasp on the current enemy location in a fight. Meanwhile, in CSGO, if you see an enemy a screen away, they are not gonna jump over your head in a second, but in Quake that can happen. So it makes Quake more about jumping and aim flicking, while CSGO is more about positioning and pre-aiming.
The reason Apex gameplay takes over while games like Quake die out is because it is the third way. I won't bother writing out what Apex does, because you won't understand it when you're still blinded by the tilt.
