Fat fetishism is mostly a western thing(especially with minorities), in asian countries being fat is actively shunned. What people would consider "average" weight in the west for a woman with a little bit of excess fat would be categorically considered fat, if not obese in most asian countries.
You want to talk about a fetish that varies in definition, then you're continually citing one. "Thicc" is another man's "obese", same with "plump", "pudgy", etc. etc. Coping with "there are like 50 different tags" doesn't matter when the most commonly used tags are generally a couple at best, and dwarf the smaller use cases.
Japanese artists draw way more futa than fat fetish art. It's not even comparable. You have no evidence other than your claims, I can actually go to imageboards, pixiv, nijie, DLSite, etc. and immediately find futa art in vastly greater quantities by comparison.
