You might say, "Sure, but do you believe Anycolor?" And to that I'd say, "As opposed to WHO?" Doki hasn't said jack shit and even in her final statement she admitted it wasn't a black and white situation, the list was meant for her lawyer only and she wrote it when her head was in a bad place. In other words, her bullying claims are probably nothing shocking.
It is specifically the "fans" who have crafted a narrative to fill in all the blank spaces and in each one they've chosen to fill it in with just about the worst things you can imagine, instead of approaching the situation more parsimoniously. However, that behavior didn't come out of nowhere, it came from a building up of negative feelings towards Nijisanji due to the constant graduations/terminations and the unceremonious way management treats them, the cancelled 3D live, the 2% rumor and not letting livers have their play buttons. When Mel got fired, people were devastated because she's such a sweetheart and now they'll never see her at Holofes again or in Hololive collabs; when Selen got fired, everyone breathed a sigh of relief. That should tell you something.
In isolation, this whole incident is not THAT bad, but it was the final straw for many people.
