It means you can't argue they are being overly harsh once they go after you for damages. Because you already agreed, in writing, that the number was fair.

So as an example, your employment contract could estimate that you are worth $500/day to the company. If you sign the contract, and then decide to quit 100 days before your contract is over, you would owe them $500 x 100 = $50,000.
