in case you were wondering, the names aren't really connected beyond the sound of the final two kana
梅干し (うめぼし)
umeboshi = dried plum
烏星 (えぼし)
eboshi = crow/raven+star, but also a homophone of 'eboshi' in 'katsuonoeboshi' which is the japanese word for portuguese man o' war (named after 烏帽子 'eboshi' which is a hat nobles wore)
and si instead of shi is just a different way of romanizing it
