If Cover's contract is similar to kurosanji, they may have been threatened with termination, which would have led to at least 3 months worth of earnings being taken away. Cover saved face, and officially, both of them left on amicable terms.
For Vesper specifically, it seems to have been strictly related to something in his contract. When they left, one of the EN girls (I think it was Ame?) said something about lawyers in a joking manner. Personally, I didn't think much of it at the time, but notVesper has recently released a short video where he strongly advised anyone to get a lawyer if they need to sign an agreement with a vtuber agency. I just hope it wasn't something retarded like:
