Although watching holos renewed my interested and I started up a server again. And to actually answer your question: It's reputation as a game that's only for kiddies is undeserved. While hordes of kids do play Minecraft it is the best selling game of all time for a reason. Nothing capture's the idea of limitless potential more than Minecraft.
It can be everything you want it to be and more. The whole world is literally your playground.
It can be an immersive sim, it can be a digital Lego, it can be a legitimate editor for voxel art. It can be a Construction and management simulation a la Factorio, it can be an MMO, it can be team based multiplayer, it literally spawned the current, massive, industry wide trend of battle royals (yes Minecraft hunger games servers were the origin of battle royal games), it can be traditional action adventure, puzzle game, it can be a more elaborate version of Conway's Game of Life and much much more.
And besides the numerous ways it can be played it's also miles more substantive than nearly all of current and past triple A releases.
Minecraft doesn't handhold players, Minecraft doesn't force anything on the player, it asks them to be resourceful and figure shit on their own, or at least learn how to look things up. I really do believe that troubleshooting shit in Minecraft has helped hundreds of thousands of people to improve their tech literacy. As I said before, Minecraft mods were my personal first foray into coding. Obviously it won't go that far for most but not many games can claim that at all.

There's also a server plugin specifically just for generating extra worlds for the purpose of resource collection. Mulitple Holos refereed to a resource world, so they might be using that plugin as well, although that just could have been a normal extra world generated with Multiverse.
They also could be using some other plugins on the server side for performance and security, although we would never know about it.
It really must be weird working in some IT department and then having to set up a Minecraft server and install plugins because your company's business is virtual idols who, among other things, play a shit ton of Minecraft all day. I specifically wonder what went through the head of whoever had to manually reset Miko's respawn location the time she got stuck in the end dimension.
And obviously the holos use Optifine on the client side so that they can use custom shaders.
