Yes she can continue making money doing nothing like Gura undoubtedly does, but anyone who who works in a creative field isn't going to be satisfied with that. If someone makes a shitload of money and quits their job or gets fired or something they're likely to want to immediately is go on an extended break. But for most people even that loses its lustre after a couple of months and they want to actually do things instead of being a couch potato for the rest of their life. She'd make less money if she left Holo sure, but if she feels like she'd actually be able to lead a more fulfilling life then it's nevertheless an attractive option. That, and she'd still take a good deal of popularity out the door with her and could still keep streaming with zero issues even without the Holo branding attached.
Basically the options boil down to: Make lots of money but be perpetually frustrated and unsatisfied, or make less money (but still a lot of money) and be happy. It's pretty ridiculous how many people paint this choice as the former being the obvious answer and it feels like it comes from people who've never done a creative thing in their life.
