It's because "immercar" sounds like "in my car" in a weird voice, and since Cecilia's last green is Immergreen, by taking a part of her last name and affixing it to her car's license plate, she is able to make a subtle pun joke about how the car is both named after her and is referring to the fact that "we" (as in the chat) is in the car with her.
