The thing in America is hyper competition especially in the restaurant industry. This creates a battle royale where restaurants are fighting tooth and nail to beat out the others. This means you have to evolve or die.
Sometimes you get something amazing... other times you get something really weird and probably shouldn't have happened.
Fair food or Carnival food is this cranked up to 1111 because of how critical space is and how fast you have to make an impression on people to buy food from you. This is why you get Deep Dried everything, We Dip WHAT in chocolate!!!, bacon flavored bacon topped with bacon drizzled in bacon. Most people are buying a corn dog or French fries from them anyway.
