japanese barely eat anything, especially in the city, plus they only get tiny portions without variety, some of their food is uncooked, as humans we are not made to digest raw meat or eggs of any kind, we specialize in raw fruits and pre-digested food (aka cooked), so eating raw food close to not eating, plus they have to import most of it because they cant really produce enough so a good chunk of their food is not very affordable sometimes, industrialized food doesnt help much either since they have a serious problem with cancer related to the digestive tract, especially the colon.

Food is much cheaper in Japan vs comparable American cities. Poor people are not eating sushi regularly, it's a lot more expensive than regular food. Japanese are also much healthier than Americans, although that might be entirely weight-related.
