I'm not one of the people who thinks it would be impossible to turn down Hololive. There's plenty of reasons why someone might not want to join a big corpo. I just don't think they apply here since by your logic Grimmi was already okay with joining a corpo and having these restrictions put on her.
The only reason people think it's Hololive is because it's the biggest corpo, but nothing Grimmi has said indicated that it's Hololive.
