You shouldn't care that you're breaking up with someone because they're actually a terrible person or whatever, hence why you're breaking up. But people do care because no one's simply good or bad, there's a more complicated spectrum that exists, and it's simply when an arbitrary line is crossed that suddenly they go from being good to bad or married to single or employed to unemployed, and this is painful because they weren't that thing a moment ago and you enjoyed your time with them then, and you'd like for it to stay that way because change is gay.
And anytime anyone quits or runs away or dies or whatever, it's going to be sad in part for the simple reason that you had a part of your brain dedicated to all these expectations and hopes, like memories that don't exist yet, and now you have to erase all that shit from your brain and that's painful. Your brain is now full of stuff that you anticipated happening and now you know it won't. It's all gone. You have to undergo a physiological change to keep up with the world changing and that sucks because you liked how things were before and there's no telling whether you'll like how things are changing. You probably won't.
You're right that this is their decision and on some level everyone should be upset with her for making that decision, because it shows she doesn't value your comfort with the present situation as much as you do obviously, but there's also a bigger picture to consider.
1. What does it say about Hololive as a whole that she's leaving?
2. There will always be a hole in the image of Hololive where this person is supposed to be but they're not anymore. Some people don't like that, they like things being neat and orderly and perfect, and having all these people coming and going fucks with that.
