Fries sometimes leave the skin on, especially the thick potato wedge ones. And baked potato of course (I guess you could scoop the insides out and leave the skin if you're a freak)
Also technically not skin-on but there are also "loaded potato skins" where you do that but keep the skin and fill it with cheese and bacon
