As for mixing it's because the spanish crown was actually pretty chill with the aborigins or however they're called now compared to the british, the main order was to expose them to religion, they legally couldn't be slaved in the same way the africans were due to some treaty but were forced to pay tribute, essentially still forced work as they can't really earn money for the crown otherwise, but their conditions were better than blacks, so spanish people fucked the aborigin women if they felt like it since they were alive and available for them.
As for the black mixing it was due to black women slaves being let into maid positions, where the colonizers fucked them too, black men worked the fields so tough luck for them.
Political positions vary by country but colonization isn't as relevant as what happened after it, and even then modern politics is very distant from the 19th century. I think brazilians and mexicans care about it more than the rest but it's still not important.
There's not a caste system at all, but some countries do hate others, i.e all of latam hates memezuela, argies hate bolivians, etc
