My only serious suggestion is just start out on modern kits first. Usually any High Grade from the latest series will be in stock, normal price, and be a good kit to build.
You'll often see people say stuff like "As long as it's from 2007 onwards it's fine", which isn't wrong per-say but it's not correct either. Gunpla is always evolving and constantly getting easier for newer builders to take on without sacrificing model complexity or detail. The biggest thing with more modern kits is the manuals have excellent layouts, the runners are also laid out in smart ways, and the manuals now (for the past 5-10 years) feature English in them so there's no confusion about what to do.
