In terms of video playback quality (especially when it comes to vods) youtube is years ahead of twitch. Ironically most hololive vtubers seem to disable the ability to jump back live (which I don't really like), but stuff like that would be impossible on twitch.
Most content creators I watch outside of vtubers are tech people who usually have a livechat outside of youtube or twitch for their core audience, so they have full control, but that's probably not a realistic solution for vtubers since their fans are less tech adept and also significantly less hostile to big companies like google or amazon.

On twitch the quality goes to absolute shit and the ways around it are pretty bad. If you just accept the ads, twitch absolutely bombards you with ads sadly, which I find unbearable (yes even with a prime sub).
I guess it comes down to what you prefer, I much prefer the technical ability of youtube over twitch, and think the main reason streamers prefer twitch is prime subsidies, but that's obviously not the whole story.
