the experiment setup was to determine if the photon passes through both slits at the same time to create that double slit wave interference pattern. when they did this, the interference pattern disappears and they were seeing individual photons passing each slit at the different time. when you remove the sensors at the slit, the light behave like waves again and the interference pattern comes back.
but yes, the act of trying to "observe" something alters the behaviour of the thing you're trying to observe. that is the uncertainty principal.
