Nimi has a bunch of obscure Wii and modded games (i.e. Skyrim) she wants to stream which would have been impossible to get the perms for in Holo, she has vastly superior tracking on her chibi shitpost-tier model than whatever she had in Hololive. I suspect she also wanted to rebrand to something kinda darker than "mommy nature" considering how much she pushed for "goth Fauna" in her last year in Hololive and I wouldn't be surprised if management put a lot of arbitrary restrictions on that.
It goes without saying, no upper management to answer to and holding 100% of the profits is nice bonus on top of all that.
