CK2/3 = medieval strategy, focusing on interpersonal diplomacy and succession. The only one where you play as an actual person (and then their descendants, and their descendants' descendants, etc), not an abstract polity
EU4 = renaissance through enlightenment strategy, focuses more on colonialism and global trade routes and such
Victoria 2/3 = Victorian-era strategy, focuses more on great power diplomacy and screwing with people through trade and economic shenanigans. 3 also has more focus on domestic politics, but probably the least control over warfare of the lot since you're basically just setting frontlines
HoI4 = WWII strategy. You build factories and design planes and tanks and micromanage frontlines, that's about it
Stellaris = space strategy. Probably the most free-form, can design your civ at the start to fit a lot of different sci-fi archetypes. There's not as much diplomacy (though a few expansion add some content there), more just focus on building up economy and tech to keep snowballing
