Twitch wasn't made for videos. It was made for streams. As such, they have tons of bells and whistles to make streams better and more engaging for both the streamer and the viewer.
They have countless plugins, extensions, even games or programs like Crowd Control that lets viewers interact directly with the streamer. Channel points and Bits give rewards for watching streams consistently, which you can then spend on whatever the streamer set up.
Hell, some streamers have tiny games in the bottom like a little RPG boss or a fishing game that the chatters can play during the stream. A regular extension is one that turns most of the subs/viewers into little creatures hopping around the bottom of the screen and interacting with each other that can be controlled by each corresponding viewer.
Meanwhile, Youtube wasn't built for streams. It was built for videos and to sort those videos for people who might watch them. The streaming is a complete afterthought. It has absolutely no interactive features that the streamer can make use of, and will aggressively shut down any attempts at making them usable beyond showing them on screen.
The stream chat itself is so fucking RAM leaky that it can seriously slow down your computer and ruin your memory usage just by having the goddamn chat open on a single window for just 15 or 30 minutes.
The chat can also just fucking stop at any random moment for no reason, forcing you to refresh it or swap from top to live just to get it moving again.
Raiding is a recent feature and fucking sucks right now. There's no real notification and it usually gets completely ignored due to the streamer just not noticing. The default settings can lead to people just not realizing they have the system turned off for months, and from what I hear, the system itself makes it hard as hell to find someone to raid compared to Twitch which allows you to sort streams by tags, etc. to better find an audience for their viewers.
tl;dr twitch is optimized for streaming but sucks for premeditated uploads. Youtube is optimized for videos and completely sucks for both viewer and streamer as a streaming platform.
