0.5 kg onions
0.25kg celery sticks
1 garlic bulb
0.25 kg sugar
0.5 cup of apple cider vinegar
3 teaspoons oregano
1 teaspoon pepper
1 teaspoon chilli powder
1.5 cups tomato paste
2 tablespoons of salt
*additional spices - dried basil, chili flakes, it all goes well with it
Roughly chop zucchini, onions, and celery sticks. Put it into a pot, salt it and stir. Leave it for 6 hours or overnight.
Some juice should be released from the veggies, drain it and add garlic, and bring it to boil. Boil it for about 10 minutes, add the rest of ingredients and continue boiling on low heat for 25 minutes.
Once done, let it cool down and blend it into a puree. Put it into jars and pasteurize for 10 minutes.
It can stay on a shelf for 3-5 years.
