Macross Plus is pure military with almost no music. You watch 2 test pilots duke it out in cutting edge prototypes trying to win their company the government contract. Exceptional quality OVA series and probably the best plane anime content made so far.
Macross 7 Is sequel to the original series with a much stronger emphasis on the music aspect since the main characters are now a band. The MC constantly jumps into the middle of the fight and tries to stop his military and aliens from fighting. My personal favorite because I enjoyed the rock music and the moments when the story shined, but it's a pretty paint by numbers monster of the week show for over half it's runtime and military aspect is one of the weakest in the series.
Macross Zero is a prequel OVA to the original series which I remember being pretty weird. It starts as a conflict between america and Russia after they have just invented the main series transforming planes tech, but get interrupted by an alien visitor I think. I probably need to rewatch this as I can't remember much. Also is the first in the Macross series post the cell animated to digital animated switch featuring cgi robots although as an OVA series its not plagued by awkward still camera shots with slowly animating cgi like most early cgi mech attempts.
Macross Frontier is another sequel series made for the 25th anniversary of the original series. MC is again a military pilot so it's closer to the structure of the original series. Lots of fanservice for viewers that watched every Macross leading up to this one.
Most of the music follows the popular trends of it's time, so original and Plus are old school idol music, 7 is J-rock and Frontier is modern J-pop
I never watched Delta so I can't speak about it.
