Strokes are like designing something with uniform toothpicks/Popsicle sticks compared to using clay that you shape each piece into what you need.
At the end of the day, it's about using what looks good, which is subjective but with about 8 years of experience doing these, I've not found many reasons to use strokes for anything except than save time and effort in rare situations where you just can't tell the difference.
