Usualy, with this kind of tracing project, the objective when using the pen tool is to get the clearest curves you can. In technical terms, to use as little nodes/anchor points as possible. The most simple curves will only require 2 nods, and a full circle will require 4, at minimum (See elipse tool). It is all up to your judgement about how many nods you'll need to make your curves which will become shapest. I'll attach an exemple to show the general idea of it. Hopefuly this helps in some way.
