Look at this Sonata image I did for the akb threads on /a/:
The "top" of the hood opening needed three because the line was just out of scope for what the bezier handles could do. I also used a few extras in the hair, to get a better precision in some of the loose locks. I also had to use extra anchors to make the ears look flatter, but it was only by one, because of how it subtly curves in.
My suggestion? Play with some bezier lines by making multiple objects using three points (one then another equidisant, and parrallel to the first, then use the third point to go back and seal the first) and do things like make circles, ovals, and others, to see how the bezier lines best work for you. One of my favorites to use is the pull the two at point a out past point b, and make them fan apart by the size of the whole line. Then the beziers at point b, go all the way out past point a, but practically are 1/3 inch from touching point a. Try it and see what it looks like.
