What launcher are you using? Apex or Nova launcher won't require a menu button, so then you'll have that much more screen space to rice with that navbar out of the way!

As far as the new launcher goes Idk if that will work. That bar may be rom related, so its there unless you are running a custom rom. But try apex/nova launcher if you are not using them already (it looks like you already have a custom launcher, because the dock is gone). It may fix the problem.

As for the stock lock screen (I wouldn't recommend doing this just yet until you have WL) usually it's under System Settings > Security > Lock Screen. From here, setting the lock screen to "None" will completely disable it.

Folders work just as well, but I like having a game drawer, and all my main apps on one screen. I like having the option to set a grid up to 10x10. I like the gesture support. Its all personal preference

Plus, feels like the stock ICS/JB launcher, but with so much room for customization.

You can do the same on go, but way more in detail.
You can hide apps, make it a 10x10 down to 3x3 grid, remove the action bar and shit, set a wallpaper, blur the wallpaper, remove app labels for a nicer look, change the tab style, make folders in the app drawer, show notification from apps in the app drawer, change the transition just like every other launcher, and a shit load more.

Now as far as future jailbreaking, I have seen posts with screen caps of iOS 7 with the activator tweak icon on the springboard, which says that it is jailbreakable and they have found many many exploits to keep jailbreaking around for a long time. Thats why I'm hanging on to my iPhone 5. That, and I'm a beta tester.

As it said up there also, quitting applications will just force applications to have to rerun their start up code when Android can now efficiently freeze applications and manage RAM on it's own. It doesn't need your help to figure out it's low on RAM. Also unless he's running CM or some other AOSP ROM, he probably is running a crap ton of preloaded applications thanks to Samsung and touchwiz. Vanilla Android is best Android. All this ranting aside, Android is not for the light hearted, unless you're comfortable with rooting and custom firmwares, you will never have a smooth experience unless you get one of the Nexus devices. Otherwise, it just leads to a bad experience. (I hope I didn't just write a load of garbage, oh well...)
tl;dr Android will preform fine if you are the technical type.
