That's not the problem, the EVAs are more or less artificial life forms with a few slaps of armor (or restraints) put on them.
This is a far more interesting question: what about the Escaflowne?
Technically it's a robot that can transform into a dragon, the medieval equivalent of a Macross Valkyrie if you will.
