For example Batou still lifts weights even though that's completely unnecessary comnsidering his body is cybernetic.
I think the scenes with Motoko and her "girlfriends" is more to show that she, like Batou, tries to cling more base aspects of humanity in order to stave away their cyborg angst, and is not there to be read as simply "she is bi/lesbian".
Also the different interpretations kinda portray this aspect in different ways, so its kinda hard to say definitively, but in the manga its just fanservice, also its also played as a joke, so I don't think that manga Major is bi necessarily, and definitely not in Oshii-verse.
